easy st. patrick’s day cookie recipe


These cookies are such classics; I’ve shared different versions on our site over the years. {see: easter, stained glass, etc.} This time, I decided to whip up some last-minute St. Patrick’s Day Cookies, and they’re so easy, you probably have whatever you need {or close to it} already at home. So today, we’re sharing this Easy St. Patrick’s Day Cookie Recipe!

These are adapted from Jamin’s Mom’s homemade recipe, so you may have something similar. But they’re super simple to make. This time I made them up with these fun Lucky Charms marshmallows and sprinkles I already had. 

They’re magically delicious! {See what I did there!?} My daughter told me these look like Crumbl Cookies. Day made. Mission accomplished. Flattery will get her everywhere. 

Here’s what you’ll need to make the sugar cookies: {+ optional icing recipe below}

• 1 cup coconut oil {if you don’t have coconut oil, you can use shortening}
• 4 cups flour – all purpose
• 1/2 cup of milk
• 2 eggs
• 2 cups sugar
• 1 tsp baking soda
• 1/2 tsp salt
• 1/2 tsp vanilla flavoring
• cookie cutters of choice – or go with traditional shapes

Cut your coconut oil {or shortening} into flour using pastry blender, fork, or food processor until consistency is similar to corn meal.

Then, combine the remaining ingredients, and mix in with flour/coconut oil.

They yield a generous amount, and once one batch is made, the batter can easily be stored in the fridge for later. The possibilities are endless!

Bake at 350 degrees for about ten to twelve minutes, depending on your oven.

Icing

The icing is oh-so yummy and easy to mix! I found that the right tools made the difference when it comes to decorating. I just used piping bags this time, along with some food coloring, sprinkles, and more.

Icing recipe- oh so easy!

3 cups powdered sugar
4 Tbsp milk
1/2 tsp vanilla + 1/4 tsp almond extract
3 Tbsp light corn syrup

Once the cookies are cooled, add your icing and fixins and enjoy!

We had fun making a mess with these. Can you tell? These could easily be used for any theme you need. Timeless and delicious and sure to send you straight into sugar shock, so use with caution.
